This is a tried and true, easily customizable mug cake recipe. It can be adapted to be a vegan mug cake or gluten free mug cake with minor adjustments. You will need a high-walled or extra large microwave-safe mug for this recipe, or you can cut the ingredients in half for a smaller mug cake. The high-walled mug is crucial so that you don't overflow in the microwave cooking process.
When made with a nut-based flour blend (like the gluten free almond-based flour shown in the picture below) this mug cake contains 20 grams of protein - on par with or better than most store-bought protein bars. Plus, this way you can be in control of the sugar content. We promise this protein mug cake is just as tasty without the 4 Tbsp of sugar, or you can substitute a more natural sweetener such as honey or molasses.
- 1/4 C all purpose flour (or gluten-free flour blend)
- 5 Tbsp Anavii Hemp Protein powder
- 1/4 tsp salt
- 4 Tbsp granulated sugar
- 1/4 C milk (or plant milk substitute)
- 2 Tbsp softened or melted butter (avocado butter for vegan substitute)
- 1 Tbsp vanilla extract
- 2 to 3 Tbsp any other mix-ins to taste such as blueberries or chocolate chips
- Let the butter soften or microwave the butter in your mug until soft. Melted is fine but may result in a slightly different texture mug cake.
- Add your dry ingredients (flour, hemp protein powder, salt, and sugar) into your mug. Give a brief mix with a fork (shown below).
- Add your wet ingredients next, skipping the butter if you used the mug to microwave the butter already. Mix thoroughly.
- Add in any other mix-ins you would like. Blueberries are shown in our pictures. Gently mix.
- Microwave on high in two separate intervals for approximately 1 1/2 minutes each. Keep an eye on it to make sure the mug cake does not run over the lip of your mug. If you let the cake rest a little between microwaving times, you should be able to avoid any mess.
- Feel free to top with peanut butter, honey, or any other desired toppings! Enjoy (preferably somewhere peaceful).
